Meatless stew
Ingredients 1 tsp. extra virgin Olive oil 1 lb Portobello mushrooms, sliced 1 onion, chopped 2 carrots, diced 2 garlic cloves, finally chopped 1 cup leeks, chopped 1 red bell pepper, chopped 1 large potatoes, diced 2 sweet potatoes, diced 1 can tomatoes sauce 4 cup beef broth 1 cup corn 1 tbl. Dried thyme 2 bay leaves Salt and pepper to taste 1 cup cooked brown rice Directions: Add olive oil to large stew pan, wait for it to warm up. After warm add all chopped and minced ingredients. Stir once or twice and let it brown up for 3 minutes. Add tomatoes sauce, condiments and broth. Stir and simmer for 10 minutes or until potatoes are soft. Remove from heat add cooked brown rice, let it rest for 5 minutes and serve.
