Pesto spaghetti squash
Makes: 1 cup of pesto 3
Serving of spaghetti squash
Ingredients:
Pesto:
1 Cup raw walnuts
3/4 cup fresh basil leaves
½ Cup olive oil
½ tsp. Salt
1 Tbl. Lemon juice
1 clove garlic
1 whole spaghetti squash about 1 lb.
Prep:
Combine all the ingredients in the blender and blend well
until you obtain a creamy green mixture.
Spaghetti squash:
With a sharp knife poke spaghetti squash. Microwave for 5
minutes. Rotate and then 5 more minutes until, soft to touch. If need it
microwave for 2 more minutes. Until soft to touch, but not mushy. Let it cool for a few minutes. Cut in half,
discard seeds and scrape out squash from rind.
Add spaghetti squash and pesto together, mix well and serve.
