Beef, sweet potatoes and spinach chili
Ingredients:
1 lb grass fed ground beef
2 cups chopped onion
1 cup chopped red bell pepper
3 cloves garlic, mince
2 can (14 oz.) dice tomatoes, undrained
2 large sweet potatoes, peeled and chopped into cubes
3 cups of chopped spinach
1 cup beef bone broth
1 Tbsp. Chili powder
3 dray bay leaves
1 tbsp. Dried thyme
1 Tbsp. dried oregano
Salt and pepper to taste
Sliced green onion for garnish
Directions:
Heat the ground beef in a large pot and cook until no longer
pink, about 5 minutes. Add onions, peppers, sweet potatoes, diced tomatoes and
spinach, broth and add all the seasonings, cover bring to boil, simmer for 20
minutes or until sweet potatoes are tender. Serve with green onions. If desire.
