Everything Granola


Ingredients:
1 Cup raw pumpkin seeds
1 cup raw sunflower seeds
1 Cup raw walnuts
1 Cup raw almonds
1 cup raw peanuts
2 Cups gluten free oats
3 cups your choice dry fruit (Raisins, berries, banana chips, plums, apricots, coconut,  etc)
1/4 Cup Brown rice syrup

Why brown rice syrup: (Glycemic index, or GI, measures the effect certain foods have on raising blood sugar. Food with a low GI do not cause a rapid rise in blood sugar levels and are generally better tolerated by diabetic patients. Brown rice has a relatively low GI of 55 and is, therefore, able to keep blood sugar levels more stable)

Instructions:

Dump all the ingredients into a large pot, pour the syrup on top and stir. Heat on low temperature and cook until fragrant. About 30 minutes, stirring it every 5 minutes. Pour over cookie sheet and let it cool down. Store in air tight container.
